200ml fresh lemon juice
500g granulated sugar

Directions

To prepare the Syrup: Put all the components into a pot, heat until it reaches a simmer, agitating to dissolve. Then, take off the burner allowing it to reach room temperature fully. Decant into an sterilised bottle, close it and refrigerate it chilled, where it will keep for about four weeks.

Preparing the Premix: Mix every liquid ingredients in a big jug, allow it to infuse for an hour, then strain best through a fine cloth, making it perfectly clear.

When ready to serve: Measure 85ml of your batch mix into your cocktail shaker containing ice, and agitate lightly for about 60 seconds until cold. Filter to a frosted cocktail glass or similar, top with a few cranberries adding the final touch using a quick spritz of mandarin oil above the glass.
